Soil occupies a neoclassical building in Pangrati with a garden behind it, under Tasos Mantis. It holds one Michelin star and one Green Star, and the kitchen draws on the chef’s own plot at Alepochori as well as on suppliers.

The Green Star is the one worth reading

A Green Star is awarded for sustainable practice rather than for cooking, and it is given sparingly enough to mean something. Athens holds three: Delta, Soil, and Patio out at Vouliagmeni.

The distinction that matters is between a provenance claim and a piece of land. Here, as at Patio, there is land. That is checkable, and on this coast the same vocabulary is used far more loosely.

What a garden in Pangrati is worth

A household that moves to the Riviera arrives with an unlimited supply of terraces and no shortage of sea. What the coast does not have is a walled city garden on a summer evening, and that is the specific thing this room sells.

We have not eaten here, and the stars date from the 2024 selection as all standing Athens stars do.
